Cauliflower cheddar soup is a creamy, cheesy, alternative to broccoli cheddar soup! It tastes just as good as the creamy brews you get in bread bowls at the pub or chain.
Cauliflower florets are gently simmered in water, making them incredibly tender and melt-in-your-mouth.
After they reach a soft, but firm texture, heavy cream and sharp cheddar cheese are added and stirred until the soup reaches a silky mouthfeel.
Don’t worry; this soup is not pureed, so you can enjoy the texture of the cauliflower.

To make this a keto-friendly recipe, we’ve removed any carbs and gluten-containing grains from this recipe.

Directions
Step 1 – Boil: Bring 1 cup of frozen cauliflower florets to a boil in 3/4 cup of water. Sprinkle in 1/4 teaspoon of thyme and 1/8 teaspoon of tarragon. Once it reaches a boil, turn down the heat and let it simmer for about 8 minutes with the lid on. This lets the cauliflower break down, which provides the soft texture and slight thinking we need, since we’re not using flour.
Step 2 – Thicken: Pour in 1/2 cup of heavy whipping cream, 1/3 cup of shredded cheddar cheese, and 3 tablespoons of grated parmesan cheese. Remove from heat and stir until all of the cheese is melted and the soup is as smooth as silk.
Step 3 – Serve: Serve immediately!

How to Store & Freeze This Soup
This soup can be stored for up to 3 days in an airtight container.
To reheat it, simply place it on the stove over low heat and slowly bring it up to your favorite temperature.
While you can freeze this soup, we’ve found that the fats of this recipe become grainy when defrosted. If you freeze it, it will keep for 6 months.
To defrost it, allow it to thaw in the refrigerator before reheating it on the stove.
