How To Make Fresh Creamed Spinach
Fresh creamed spinach starts out with tender spinach or frozen spinach that’s added to sauteed onions and garlic.
All three of those ingredients are then simmered in a white sauce of fresh cream and cream cheese for just a few minutes more before adding the warm spice, nutmeg.
This simple side dish is packed with tons of flavor, and yes, you can even add parmesan cheese to the white sauce for an extra bit of umami!

Instructions
Remove stems from spinach and roughly chop the leaves.
Mince onions and garlic.
In a medium saucepan over medium-high heat, add olive oil and butter.
Sautee the onions and garlic for 2 minutes, until soft.
Add the chopped spinach and stir until warm.
Season with salt and pepper, tasting as you go.
Add the heavy cream and mix well.
Cook for 3 -4 minutes or until liquid reduces by half.
Add cream cheese and gouda; stir until melted.
Top with a sprinkle of parmesan cheese.
Taste, adjust seasoning, and serve!

Want to use frozen spinach? Replace the fresh spinach with 1, 10 ounce package of frozen spinach! Simply thaw and squeeze to remove excess water before cooking!
